Panch kuti dal

Serves 6-8; Prep time: 15 min; Cooking time: 30 min

15 ml (1 tbsp) urad dal
15 ml (1 tbsp) tur dal
15 ml (1 tbsp) mung dal
15 ml (1 tbsp) channa dal
15 ml (1 tbsp) masoor dal
1.1 litre water
30 ml (2 tbsp) oil
5 ml (1 level tsp) mustard seeds
5 ml (1 level tsp) cumin or jeera seeds
2 half-inch piece cinnamon sticks
2 cloves
4 curry leaves
4 small red chillies
3 green chillies, finely chopped
2 tsp ginger, finely chopped
2 tsp garlic, finely chopped
2 tomatoes, chopped
½ level tsp garam masala
2 tbsp fresh coriander leaves, finely chopped
Juice of 1 lemon
Salt

1. Mix all the dals and put into a pan with water. Bring to a boil, cover and simmer until soft. Drain and set aside.

2. Heat the oil in a saucepan and roast the mustard seeds, cumin seeds, cinnamon and cloves for 1 min. Add the curry leaves, green and red chillies, ginger and garlic and sauté for 1 min more.

3. Add the tomatoes and garam masala and continue cooking for 1 min.

4. Add the dals, coriander and lemon juice with salt. Bring to boil and cook for just a minute.

5. Serve at once with a main dish of your choice.
