Radish soup

2  radishes—fresh, white radish peeled and cut into long pieces(1.5 inch long )
1 inch piece ginger, peeled and thinly sliced                
salt and white pepper powder—to taste
coriander leaves, freshly chopped 

1. Take about 5 cups of water and bring to a boil. As it begins to boil, add the radish and ginger (fresh organic radish seriously works best).  (If the radish is pungent, somehow the soup is too strong!)

2 .Let this boil for about 8-10 min. Switch off gas, add salt, white pepper powder (be careful with this, add just a bit), chopped coriander  and serve immediately.

*Other vegetables such as ridge gourd, bottle gourd and pumpkin can be added to this soup. When you mix all the vegetables together, it looks better if they have been cubed.
