Cracked wheat (wheat rava) salad

150 g cracked wheat

425 ml boiling water

40 g pumpkin seeds

1 small green pepper (capsicum), seeded  and finely chopped

2 sticks celery, finely sliced

1 small leek, trimmed and finely sliced

½ small cucumber, finely diced

50 g chopped fresh parsley

15 g chopped mixed herbs

 

Dressing

      Grated juice and rind of 1 lime
50 ml fruity extra virgin olive oil
Salt and freshly ground black pepper

1. 
Place the broken wheat in a bowl, pour the boiling water over and leave for at least 30 minutes.  Drain in a sieve, then wring excess water out in a clean tea-towel.

2. 
Place the broken wheat in a bowl with the seeds and prepared vegetables. Season lightly.

Whisk the dressing ingredients until blended, then pour it over the salad. Top with a layer of the freshly chopped herbs, all mixed together. Toss the ingredients just before serving.
